{Recipe} Bubble and Squeak

I was trying to think of a new recipe for B1 and B2 this morning and I decided on good old Bubble and Squeak. I have not had these in many, many years but I remember that I liked them as a kid. I have seen it in the frozen section of the supermarket whist scanning through options and I considered buying it a few times but decided against it.  I was sure they couldn’t be that healthy being pre-packaged and right next to all the frozen chips.

Bubble and squeak is a traditional English dish, made to use up leftovers.

The main ingredients are potato and cabbage but you can then add any vegetable you like to them.

I decided to make some using sweet potato too.

I read a few different recipes and there’s many different ways you can make them, some healthier than others.

This is what I decided upon.

Ingredients:

4 potatoes

1 sweet potato

Roughly chopped cabbage

Roughly chopped silverbeet

1 1/2 cups of frozen peas and corn

Plain flour

Method:

Peel and cook your potatoes. Cook other vegetables. I cooked all my vegetables in my electric steamer, (note: broccoli was not for this recipe).

Mash white potato and sweet potato in separate bowls.

Divide cooked vegetables into each bowl and mix through.

Make into little patties and lightly coat with flour (the sweet potato patties were a little stickier, requiring slightly more flour).

Cook in a hot fry pan, flipping once until golden on both sides.
