{Recipe} Chicken and Vegetable Rice Balls

Ingredients:

250gms chicken mince
1 small onion, diced
1 carrot, grated
1 zucchini, grated
1 apple, grated
1/2 cup breadcrumbs
1 egg
250gms of cooked Jasmin rice

Method:

Pre-heat oven to 180 degrees C

Place chicken mince, onion, carrot, zucchini, apple, breadcrumbs and egg in a bowl and mix well until combined.

Place cooked rice on a plate.

With your hands, roll a small amount of the chicken mixture into a ball and then roll it in the cooked rice to coat the ball.

Continue this with the rest of the mixture, making your rice balls as big as you would like them.

Place the rice balls on a lined baking tray and cover with foil.

Bake for 15-20 minutes.

Remove the foil and bake for another 5 minutes or until golden.

* Be sure not to leave them to long as the rice will over cook and go hard.
