Last week I made some chicken and vegetable rice balls that were really yummy.
This recipe uses the exact same mix as the rice balls, though calls for puff pastry instead of rice.
Ingredients:
250gms chicken mince
1 small onion, diced
1 carrot, grated
1 zucchini grated
1 apple, grated
1/2 cup breadcrumbs
1 egg
3 sheets of partially defrosted puff pastry
Method:
Pre-heat oven to 180 degrees C’
Place chicken mince, onion, carrot, zucchini, apple, breadcrumbs and egg in a bowl and mix well until combined.
Cut each sheet of puff pastry in half.
Line a row of the mixture down the center of each half.
Roll one side of pastry over the mixture, then the other side over to make a roll.
Place the rolls join side down, on a lined baking tray.
Cook for 30-35 mins, until golden and cooked through.
And…keeping B1 and B2 occupied while Mummy cooks is half the battle.
