{Recipe} Chickpea and Pumpkin Slice

I love it when I make up a recipe and it turns out. I love it even more when it is gobbled down by B1 and B2. This was a huge hit and super easy to make.

Chickpea and Pumpkin Slice

Ingredients:

5 eggs
1 cup grated cheese, plus another handful for sprinkling on top
1/4 cup milk
1 cup self raising flour
1 carrot grated
1 zucchini sliced
1 x 200gm can chickpeas
200gms cooked pumpkin

Method:

Preheat oven to 200˚c.

Mix all ingredients in a bowl (except the extra handful of cheese).

Spray a baking dish with cooking spray and pour in your mixture.

Sprinkle remaining cheese on top.

Place into the oven and bake for approx 30 minutes.

Slice and serve.

I cut up B1 and B2′s into little cubes.

I kept some in plastic containers in the fridge for the next day and I froze some in zip lock bags.
