Fish. We need to eat more of it in our house, but I really struggle to make nice meals with it.
Last night, it was the frozen barramundi’s turn to be botched up by my terrible fish cooking skills.
I ended up throwing this little beauty of a sauce together to pour over the fish (and hide the mess I’d made of it when it stuck to the pan). It was nice over the steamed veges too.

Easy Cheesy Sauce to Accompany Fish
1½ tablespoon plain flour
¼ cup light milk
¼ cup grated light tasty or cheddar cheese
1 teaspoon Dijon mustard
salt and pepper
In a small saucepan, over medium heat, make a white sauce by combining the flour and milk. Add the milk a few tablespoons at a time to avoid lumps. When it comes to the boil, take it off the heat and add the cheese and Dijon mustard. Mix until smooth. Season with salt and pepper and serve over your favourite grilled fish.
