{Recipe} Easy Peasy Creamy Chicken

Yesterday I tried a new recipe. A very quick, easy and simple one that turned out great. Again, using a tin from the pantry, keeping up with my ‘Ten to do’s in June’ challenge. This time I used a can of creamy chicken soup, my slow cooker and only three other ingredients. After only two or three mouth fulls I got “This is beautiful” from hubby, which is a sure fire sign that I am onto a winner. Also it’s  relatively healthy and not to saucy making it a winner with me. It was plain enough for B1 and B2 to have some for their dinner too! I had mine with extra steamed vegetables on the side and hubby had some mashed potato and a few corn cobs. You could have it with just about anything, like some rice or pasta or even some salad and bread.

Ingredients:

500 gms Chicken breast
1 red capsicum
2 cups of green beans (I used frozen beans but you could use fresh)
1 can of Creamy Chicken Soup
1/2 cup water

Method:

  1. Cut chicken into chunks.
  2. Cut capsicum into small strips.
  3. Turn slow cooker on. I used the Auto setting. Otherwise I would probably say high as the chicken is raw.
  4. Place chicken, soup, water, capsicum and beans into slow cooker.
  5. Stir to mix all the ingredients together.

Sit back and relax, or get on with the hundreds of other tasks you have for the day. The lovely aroma will fill the house and by dinner time you will have a beautiful meal all ready and waiting. I will definitely make this again.

I wanted to post a photo of the ready to eat meal but it was scoffed down before I remembered to take one, so next time I make it I will add one.
