{Recipe} Ham and Veggie Muffins

Ingredients:

2 cups self raising flour
1 cup milk
1 cup grated cheese, plus 1/4 cup to sprinkle on top
400g can creamed corn, 1/4 cup kept aside
8 slices ham, diced
1 zucchini, thinly diced

Method:

Preheat oven to 180˚c.

Place flour in a bowl. Add all the other ingredients, except corn and cheese put aside. Mix until combined.

Spoon the mixture into a lined muffin tray.

Spread remaining creamed corn on top of each muffin and then sprinkle a little cheese on top.

Bake for approx 25 minutes or until golden and muffins spring back when lightly touched.
