{Recipe} Spaghetti and Vegetable Muffins

I was flicking through one of my recipe books this morning, Four Ingredients Kids, looking for inspiration for something new to cook for the twins and I came across a recipe for some spaghetti cupcakes.

I decided to give them a try as this would also help me achieve one of my ‘To do’s for June‘ in finding recipes to use all the tins of things I have in the pantry.

They turned out great and B1 and B2 loved them.

I altered the recipe from the book by adding some vegetables too so that they would also get a veggie intake. I just added some (thawed) frozen mixed vegetables to the mixture. I am calling mine muffins, as to me they looked more like muffins than cupcakes and, well muffins sounds better to me.

Ingredients:

420g tin of spaghetti in sauce
4 eggs
2 cups of grated cheese
1 cup frozen mixed vegetables
spray oil

Method:

  • Preheat oven to 180 degrees.
  • In a bowl mix together the beaten eggs, 1 and 1/2 cups grated cheese, the spaghetti and thawed mixed vegetables.

  • Lightly grease the muffin tray.
  • Evenly divide the mixture between the muffin cups.

  • Top each with the remaining cheese

  • Bake for 15 minutes or until golden.

I cut them into bite size chunks for B1 and B2.

Dig in.

I froze some for later too.

I will cook these again as they were easy and inhaled by the twins.
