Hardly a revolutionary recipe (if I can even call it a recipe) but it was a huge hit in this house.
I made four mini pizzas.
What I used:
Tomato Paste
Small piece of zucchini
Small chunk of sweet potato or pumpkin
Grated pizza cheese or mozzarella
Round sandwich thins (a great size for small hands)
~ some diced ham or chicken would be nice on it too.
What I did:
I cubed a small piece sweet potato and zucchini to roast in a hot oven (180˚ – 200˚) for 20 minutes. Then I assembled the pizza.
I spread the sauce, sprinkled a little bit of cheese (hubby’s tip), put the veges on and topped it with some more cheese to hold the veges on once cooked.
I put them in a 180˚c oven for 8 minutes and served them cut into quarters.
A very successful meal. Needless to say, they did not last long.
