Shrimp and Cucumber Salad…

One of my favorite restaurants in Gibsons makes this salad.

I am totally making this recipe up, but it tastes exactly the same… so their secret is no longer safe, because this is going on Pinterest.

This is the perfect seafood summer salad, so refreshing and stupid easy to make.

Try this today, seriously.

This recipe will feed about three people…

What you need:

shrimp and cucumber salad

  • 1 1/2 pounds fresh or frozen shrimp (you can used canned, but it is nowhere near as good)
  • 1 long English cucumber
  • 1 large sprig of fresh dill (again you can used dried, but not as good)
  • 2 tbsp apple cider or red wine vinegar
  • 1 tablespoon grape-seed or olive oil
  • fresh ground pepper

What you do:

Slice cucumber in thin slices, I peeled the skin off, but if you like you can leave it on, mix together with shrimp, dill, vinegar and oil. Refrigerate for at least an hour before serving.

Enjoy. So easy, so delicious and good for you too!!!
