Soy Glazed Tilapia with Roasted Brussels and Rice

For some reason, when it’s raining I really really really want coffee.

I used to drink coffee a lot. But lately I haven’t since I’ve swapped up my coffee/diet coke fix with lots of hot green tea.

I had a tall pikes place with soymilk. Hit. The. Spot!

Fitness

I was waiting all afternoon for my trip to the gym. I felt it, I was craving it, I couldn’t get off work soon enough.

But then I got to the gym and I had one of those workouts where the minutes just crawled by. I tried watching Ellen. I tried reading 2 different books. I even had Pandora playing on my headphones and nothing held my attention.

On a better note, I tried a new flavor of Gu today! Peach Tea!!! I think they might be my newest favorite. Watermelon… sorry you’re kicked off your Gu Pedestal. :mrgreen:

I chomped the whole bag while painfully ticking off the minutes on the elliptical. 180 calories.

Today I did 1 mile on the treadmill for The Summer Run Streak. Then I did 45 minutes on the Cybex Elliptical Glider at level 16. Good workout, but kinda frustrating.

Dinner

I found another recipe on Real Simple. But I really tried not to. I went to one of my favorite food blogs and searched through her recipes, I clicked onto the one I wanted and she just directed me right back to good ole’ Dinner in 15. I guess it was fate.

Soy Glazed Tilapia

Makes 3-4 servings

prep time: 10 minutes | cook time: 15 minutes

Ingredients

  • 2 TBSP brown sugar
  • 1 tablespoon liquid aminos
  • 2 teaspoons ginger (the recipe calls for fresh grated but I didn’t have any so I used the seasoning version)
  • 4 big pieces of white fish (Tilapia)
  • 2 tablespoons
  • kosher salt and black pepper

Directions

  1. pre heat oven to broil. If your fish is frozen, defrost in the microwave. Line a broiler proof baking pan with foil and place thawed/defrosted fillets on it. Drizzle with oil and sprinkle with salt and pepper.
  2. Combine brown sugar, liquid aminos, and ginger in a small cup and whisk until combined.
  3. Cook the fish for 5-7 minutes or until opaque. Brush the fillets with the soy-ginger mixture twice during the last two minutes of cooking.

We had our soy glazed tilapia with roasted brussels sprouts, steamed green beans and a brown rice medley.

This fully cooked, frozen rice is awesome. It’s really tasty and so nice to have on hand. You just put a cup of the rice into a bowl and microwave for a bout a minute. DONE!

The soy glazed fish is about 250 calories. I think my dinner was about 450 total. Pretty sah-weet!

And after dinner I ate a fuji apple and I might dig into a few of these later, while watching the Bachelorette. ;-) (60-100 cal)
