With my SO working a full time job, and I working a part time job during the week we often shop for lunch items.  Usually grabbing the sandwich meats, cheeses, bread, and easy snacks for fast and convenient lunches.  However, we often get bored with eating the same things over and over and are often looking for different ideas for lunch.  This time around we were about to embark on a road trip to Los Angeles, and with the trip I wanted to bring our own lunches during the long drive, but wanted something a little different than just sandwiches.

A few days before the trip I decided to head to my local Smart & Final to stock up on a few lunch items, and to develop a new recipe to try out.

Smart & Final has a great deal this week; buy 5 Kraft Items receive 5 Dollars off.  As you see above, this was me perusing the juice aisle where I picked up my 40 ct. Capri Sun pack.  They also had huge containers of Kool Aid and Country Time Lemonade that were a part of the deal.

I went through the store and picked up other Kraft items such as Mexican Shredded Cheese, Corn Nuts, and Knudsen sour cream along with other items for my recipe.  A lot of the items coming out of the produce department: serrano chiles, cilantro, and green onions, and a quick stop in the meat department for some cod fish.

Then it was time to come home and begin creating the recipe for our road trip.

Throwing a little Olive Oil into the pan then sauteing chiles and green onions together before slicing up the cod filet and throwing the fish into the pan.  These will soon become delicious fish tacos.  Recipe Below. #CollectiveBias

Fish Tacos   Spice UP Your Brown Bag Lunch with these Fish Tacos #ChooseSmart #Shop Print Prep time 10 mins Cook time 15 mins Total time 25 mins   A delicious take on homemade fish tacos. Author: Jamie Gall Recipe type: Seafood Serves: 2 Ingredients
  • Olive Oil
  • 2 Serrano Peppers
  • 1 Green Onion
  • 1 bunch Cilantro
  • Sour Cream
  • 2 cups Mexican Shredded Cheese
  • 8 Flour Tortillas
  • Cod Fish Filet
  • 2 cups Shredded Cabbage
Instructions
  1. In a frying pan pour in 1 Tbsp. of Olive Oil or peanut oil and heat up.
  2. Cut up Serrano Peppers and Green Onion and saute in pan.
  3. Slice up cod fish filet and add into the saute peppers and onion. Cook for 12 to 15 minutes.
  4. Heat up flour tortillas. Add in fish to the tortilla.
  5. Then top with Shredded Cabbage, Shredded Cheese, Cilantro and a dab of Sour Cream.

These fish tacos turned out delicious.  When you cut up the peppers make sure you dice them really well otherwise the fish tacos will come out a little more spicy, but if you like spicy you will love these.  You could easily take the peppers out too and just saute with the onions too.

The best part about making tacos is how easy they are to fold up into sandwich bags making it so easy to throw into a brown bag lunch.  Add your favorite snack items and your lunch is made.  It’s really that easy.  You could easily make a large batch of fish tacos, have for dinner the night before, and have the rest for lunch the following days after.
