Steak, Sweet Potatoes, and Spinach

I hope everyone had a great Valentine’s Day.

Vinnie and I had a nice dinner together. He gave me a card, I gave him a card and some chocolates were exchanged too!

I have this problem with wanting to try every chocolate in the box, but because I know how bad they are for me, I just nibble on each one. Everyone else gets mad, but oh well!

I have been trying to incorporate more veggies into my meals, but it’s not as easy as I would of thought. I am pretty uncreative when it comes to my eats. I stick to what I know and like. Hence, the sweet potatoes and spinach.

One package of spinach does not go to far when sautéed…

One sweet potatoe goes a really long way!

Spinach Sautee
1 package of spinach
1 garlic clove
2 tsp of EVOO

Heat EVOO and garlic. Once garlic is browned add spinach and let wilt. Stir the spinach to make sure the bottom leaves don’t burn.

Sweet Potato Hash
1 medium size sweet potato
1/2 onion
1/2 tbsp of EVOO

In a sauté pan, caramelize the onion with the EVOO. Add the sweet potato and let cook for 10 min, continuously stirring throughout.

The spinach and sweet potato make perfect sides to a delicious steak

 

The steak was cooked to perfection, thanks to the grill master himself, Vinnie!

 

Soy Sauce Agave Steak

Ingredients:
Soy Sauce
Agave
Garlic
Salt and Pepper

The amount of ingredients will depend on the size of the steak. Make sure you have enough, to cover the steak. In a big bowl, combine all the ingredients, add the steak and let it sit for 20 min, soaking in the marinate. Heat the grill. Once steak is ready to cook, grill the steak for 5 minutes on each side.
Let it cool for a couple minutes before slicing. Viola!

 

A super easy, protein, veggie packed meal!
And a glass of red wine makes it complete.
