Steamed Chicken with ginger

This is a very simple dish yet delicious and healthy. I cooked this for lunch to be eaten with white rice and a simple stir fried vegetable to go with it... very wholesome meal which my family enjoyed very much:)

The ginger will softened the chicken so make sure do not marinate too long. Just about 30 minutes is fine for the chicken to absorb the flavors before steaming.

The recipe is pretty easy, just a few ingredients are needed. Here's how I do it.

Ingredients:

1/2 chicken, cut into bite size pieces
80g ginger, pounded and squeeze out the juice
2 cloves garlic, minced finely
2 tablespoons spring onion, green part only
A handful of chinese parsley for garnish
A teaspoon of goji berries

Marinate chicken for 30 minutes with:
Ginger juice
1 tablespoon sesame oil
1 tsp salt
1/2 tsp pepper powder
1 tablespoon chinese wine

Heat up a skillet and add 2 tablespoon of oil. Once the oil is hot, stir fry garlic and ginger until fragrant. Leave aside.

Add enough water to the wok so that the water reaches just below the bottom steamer. While waiting for the water boil, arrange chicken (together with marinate juice) in a baking pan or any deep heat resistant plate is fine. Top with the ginger/garlic mix and goji berries.

Once the water is boiling, place the chicken into the steamer and steam on high heat for 15 minutes or until chicken is cooked. Garnish with shredded chinese parsley and serve immediately.
