I was quite impressed with myself for planning and prepping most of our meals for our recent camping trip.
I washed the fruit and cut up the watermelon so it was ready to eat.
I made fresh marinades for the meats and cut up vegetables to go with the chicken kababs. I froze the marinated meat in snap lock bags and thawed it when we needed it at the camping ground. I also froze some snags (sausages) but you don’t need a photo of them

One of my other favorite meals was a BBQ Chicken Nachos Salad. We bought a BBQ chook and had packed all of the other items. I tore the chicken into small strips and put it over plain organic corn chips, topped it with avocado, taco sauce, grated cheese, light sour cream and coriander. Who said camp cooking can’t be gourmet?
It made such a positive difference to know ahead of time what we’d be having for dinner each night.
