Surprise Virtual Baby Shower!

I am so excited to share our Surprise Virtual Baby Shower for my dear friend Tiffany!This has been in the making for months now.We don't all live close enough to celebrate with her in person, so we wanted to celebrate on the blogosphere (:
We planned a "Little Man" themed shower, filled with delicious food, delectable beverages and sweet decorations - all celebrating little Elliott and his soon arrival.

I chose to make a dessert for the shower.

Little Man Lemon Blueberry Cupcakes

Little Man Lemon Blueberry Cupcakes

Ingredients- 1 box lemon cake mix- 1 package instant lemon pudding- 8oz plain greek yogurt- Juice from one lemon- 1/2 cup milk- 3/4 cup vegetable oil- 4 eggs- 1 tsp vanilla- Zest from one lemon- 8oz blueberries- Flour- Cream cheese frosting- Blue food coloring
Instructions1// Preheat oven to 350 degrees. Line muffin tins with paper cups.
2// In a large bowl, mix together the lemon juice, lemon zest, greek yogurt, milk, oil, vanilla, and eggs until smooth.
3// Add in the cake mix and pudding. Rinse 3/4 of the blueberries and toss in flour. Fold them into the cupcake batter, but don't over mix. Fill the liners 2/3 full and bake for 16-18 minutes.
4// Cool cupcakes completely. Make cream cheese frosting or buy a can from the grocery store. Add in blue food coloring until it is the desired color.
5// Pipe or spread frosting onto each cupcake. Place a washed blueberry on top for decoration.


I am so happy for Tiffany and I can't wait to meet her little bundle of joy. she has been such a dear friend to me and I feel so blessed to have her in my life (:
