Sweet Pickled Jalapenos + Sunshine

I was excited to make this version of pickled jalapenos. I am probably one of the few people who hates dill pickles, dill pickled jalapenos, dill potato chips, etc…. No dill for me! But sweet and spicy pickles/jalapenos – I LOVE those!

This is super easy to put together – less than 10 minutes from start to finish.

Print Sweet Pickled Jalapeno’s + Sunshine

Ingredients

  • 3/4 cup apple cider vinegar
  • 1 cup water
  • 7-8 jalapenos
  • 3 tablespoons sugar
  • 1 teaspoon pickling spices (sold by the spices in the grocery store)
  • 1 tsp. kosher salt
  • 3 garlic cloves

Instructions

  1. In a medium sauce pan, add the apple cider vinegar, water, sugar, salt, pickling spices and garlic.
  2. Bring to a boil and simmer for 5 minutes and remove from heat.
  3. Meanwhile, slice the jalapenos into circles. Place the jalapenos in a colander and rinse under cold water for a minute. Drain well.
  4. Add the jalapenos to a jar, and pour the brining liquid into the jar. Place the lid on the jar and store in the fridge overnight.
  5. These will keep for about a week in your fridge. Add them to your favorite sandwich, on top of a burger, with tacos or nachos!

I also wanted to take a moment to introduce someone I have been following on Facebook the last few months. Her name is Sunshine – and she’s on a public journey to get to 199 pounds – something she has never been as an adult. She’s made great strides, she runs races, has changed her eating habits and the weight is coming off. She made a HUGE milestone this weekend and put it on You Tube. I’m super proud of all she’s done and he’s got over 25,000 followers on Facebook following her journey! You can follow her too HERE

I love when people start achieving their goals – and there is so much more to getting to your goals than a number on the scale!!

How was everyone’s weekend? We had rain all day on Sunday – a great day to spend in the kitchen! I made homemade salsa, artisan bread (which my daughter mostly made), chia seed pancakes (which I will post later this week).
