Jamie Oliver’s Snickers Semifreddo simply is the best dessert. Period! I make it at least once a year – usually for Christmas, but this year time somehow flew by and I have made Snickers Semifreddo for today’s New Year’s Day lunch. It’s such a firm favorite of mine that I have gotten all my friends to try it as well. It’s so easy to make and it’s keeps well in the freezer for a couple of months – even though I don’t ever seem to have that problem. Snickers Semifreddo is just right on every level. It’s fluffy. It’s not too sweet. But it’s sweet enough. It’s a perfect blend of chocolate, nuts and cream. Hey, I love Snickers as a candy bar; but to make them into a heavenly dessert is just brilliant. Be warned that once you have tried this there is no way going back! Thank you Jamie Oliver for creating this!!! I am a firm follower of Snickers Semifreddo movement!
Jamie Oliver’s Snickers Semifreddo
Preparation time: 1 hour (plus freezing time overnight)
Serves: 12
Ingredients:
1 vanilla pod
55 g caster sugar
4 large eggs
500 ml whipping cream
sea salt
4 bars of Snickers (of which 1 for topping the Semifreddo)
50 g dark chocolate
Please note: This recipe contains raw eggs
Directions:
Halve the vanilla pod lengthwise and scrape out the seeds. Set the seeds aside.
Finely chop three Snickers bars. Finely shave the dark chocolate. Set aside.
Finely chop the last Snickers bar and keep the chopped Snickers separate for topping the Semifreddo. Set aside.
Separate the egg yolks from the egg whites. In a large bowl whisk the sugar with the vanilla seeds and egg yolks until the mixture is pale.
In another large bowl whisk the whipping cream until it forms soft peaks – take care not to over-whisk. In a third large bowl whisk the egg whites with a pinch of sea salt until firm peaks form. Put the 3 finely chopped Snickers bars and the dark chocolate shavings into a heat-proof bowl and set it over a saucepan of simmering water on a low heat. Make sure that the water does not touch the base of the bowl. Leave the chocolate to soften slightly.
Gently fold the whipped cream into the egg yolk mixture, and then carefully fold the egg whites with a large metal spoon into the mixture. Spoon half of the ready mixture into a freezer-proof dish. If you plan to serve the Semifreddo at several occasions it’s a good idea to use several smaller dishes. Fold the softened chocolate pieces into the remaining mixture. Take care that you do not knock any air out of the mixture. Add the mixture with the chocolate pieces into the freeze-proof dish(es) on top of the plain Semifreddo mix.
Swirl the two mixtures together in the dish. Sprinkle the remaining finely chopped Snickers bar on top.
Cover the dish and freeze. Leave the Semifreddo in the freezer at least overnight. Take the Snickers Semifreddo out of the freezer about half an hour before serving it to give it time to soften.
