Time For Lunch

I wonder if all Mums find it hard to make time for lunch whilst on Maternity Leave because I certainly do. Lunch at the moment, is 'run to the kitchen - grab the easiest thing - eat - very quickly.' I've gone from grabbing a packet of crisps to now grabbing toast and even managing to smear with some mushroom pate.. I'm really trying to make an effort with lunches and want to make sure I'm not just eating the same thing everyday. 

Recently I was sent some packets of Ryvita, I tried their Fruit Crunch with chocolate spread and strawberries on top, it was perfect for a quick snack and really easy to put together. I'd recommend Ryvita to those looking for a quick, easy, low fat snack. 


Time For Lunch
Other lunches I try and make time for include soup - mostly vegetable, mushroom or leek and potato.
Pitta Bread with grated mozzarella, baby tomatoes and spinach (good for iron levels - which if you're like me may be low after giving birth).
Mild curry Super Noodles - yes I know I'm terrible!
Crumpets with cheese on top with a cup of tea obviously.
And sometimes something very quick and easy cooked from the freezer like Linda McCartney sausage style rolls and mini pizzas.
I'm not always the healthiest eater but I'm always looking out for new veggie lunch options that are easy.
