Tuna and Vegetable Squares

I was so excited when these were gobbled down by B1 and B2. I first tried them as they were coming out of their unwell period, when they hadn’t eaten much at all for days and days.

I am happy to report that it wasn’t just a fluke. Or just because they were so hungry they would eat anything, once they felt a little better. They have had them a few times now and they have been a success each time.

Super easy and quick. I have a new go to recipe.

Ingredients:

1 cup of cooked mixed vegetables (frozen is fine)

1 cup cooked corn kernels

1 cup self raising flour

3 eggs

1/2 cup milk

1 cup grated cheese, plus a small hand full to sprinkle on top

1/2 onion finely chopped

1  210gm  can tuna in spring water, drained

Method:

Preheat oven to 200′c

Mix all ingredients in a bowl.

Place mixture in a greased baking dish or slice tray.

Sprinkle a  hand full of cheese over the top.

Cook for approx 40 mins or until golden on top.
