Vegetable Ribbon Spaghetti

B1 and B2 have both been very sick over the last week or so. They are much better now, but their eating is still not the best (but much better than nothing, which was their diet while unwell).

Two nights ago, their Daddy was having Spag Bol for dinner, and although they have rejected it many times before (except sometimes the spaghetti), I thought why not? They’re rejecting everything they normally eat. So I served it up and to my surprise they ate most of it (Okay, B2 maybe only half and with a little help).

The next night I was racking my brain for things to try. I had some chicken meatballs in the freezer, but they normally won’t eat meatballs or if they do, they have a chew and spit it out. Then I had a thought… I had seen around the traps a few times the idea of using veggie strips in place of spaghetti. I thought I would give it a go.

I used carrot, zucchini and cabbage. I thinly sliced the cabbage, then used a veggie peeler to peel strips of carrot and zucchini.

Next I placed them all in a bowl and cooked them in the microwave.

When they’re cooked…viola! Vegetable spaghetti!

I divided them out into B1 and B2′s plates. Next I added the cooked meatballs and some pasta sauce, then sprinkled some grated cheese on top.

They were excited when I placed it in front of them, always a good sign, and it went very well. B1 only ate one meatball, but that’s more than ever before, and she ate most of her veggie spaghetti. B2 ate three of his meatballs (I nearly fainted watching him as I was amazed), and about a quarter of his veggie spaghetti.

It’s a great way to get more vegetables into kiddies ’cause, let’s face it, spaghetti is fun – even vegetable spaghetti!
