I always like coming home, although it’s pretty bitter sweet. I’d love to stay on vacation forever.
We had a blast! It was so quick but definitely worth the travel time. Tahoe is about 5.5 hours from where we live.
I was ready to get back to my usual clean eating so I started the morning with some hot magic lemon water.
then I got to cooking and made an evoo fried egg on toast with a smidgen jam. An apple and ginger root tea on the side.
I love you simple {clean} breakfast!!!
Clean Eating Progress: Week 4 & Vacay!
This weekend I didn’t want to miss out on anything. I still followed my healthy guidelines (liberally) and I made healthy swaps when I could. Usually I’m in Tahoe with Max’s family. They LOVE cooking so we don’t eat out. I knew with my family we’d be trying a few different local restaurants and I didn’t want to miss out on any of that!
Today when I stepped on the scale it wasn’t something I loved seeing. When I left on Friday I weighed 159 pounds (crazy sauce!) and this morning I weighed 165.5 (holy punch in the face!).
Let’s do a little math… My lightly active body needs about 2000 calories a day just to function. That means in order for me to actually gain 5 pounds in 3 days I’d need to eat (3500 calories in a pound) 3500 x 3 = 10,500 calories. And that’s on top of the 2000 x 3 = 6000 calories I already needed just to maintain my 159.
That’s a total of 16,500 calories. I didn’t eat that many calories. So, there is really nothing to worry about when it comes to the number on the scale. Bodies do crazy things when the normal routine changes. Yes, I ate a little more than normal and it was in the form of things I haven’t been eating like cookies, sugar, white flour, muffins, beer. I was also on vacation in higher altitude, running at that altitude, I’m definitely a little dehydrated. My body’s just makin’ up for it.
The key is to get back to the normal clean eating routine and everything will balance out this week. Easy as pie.

Lake Tahoe in a Weekend: Friday, the trip up.
Max and I left Salinas at 12:45. My parents and brother weren’t leaving until around 5pm.
We wanted to get up there as soon as possible. Max and I could both get off work at noon so, why not?!
We stopped for snacks so I could get one last post ready to publish. Green Teas!
I bought a few snacks for the road too. Which turned out to be a good thing because we hit traffic just north of San Jose and weren’t out of it until we hit I –80. The 5.5 hour trip took us almost 9 hours (with an hour stop for dinner of course).
This Salt and Pepper Popcorn might be my newest favorite snack.
We saw a Google car! You know the ones that drive all the roads in the world so you can do “street view”?!?!?! That’s it!
After a full afternoon and evening of driving we stopped in Truckee for some dinner. We had to celebrate BBQ Friday!!!

Wow were we happy to finally get out of the car and stretch our legs.
This restaurant is awesome! Their menu is up above the bar on chalk boards and it’s HUGE! They had everything (except tri-tip) and their sides were to. die. for. They had mac and cheese, garlic fries, coleslaw, regular fries, onion rings, corn bread, garlic bread… just to name a few.
Oh my goodness. I’m drooling just looking at these pictures again.
When we walked up to order the bartender told us it was a 35-40 minute wait and we looked at him like he was crazy… we’ll wait!
We ordered some beer to keep us entertained during our wait. Max had a local brew and I had a Blue Moon.
Happy. Happy. Happy.
The fact that they have straight up whisky on their Happy Hour board and it’s crossed out says it all.
We both ordered brisket. I had mine with potato salad and veggies. I had to choose between cornbread and a biscuit… really?! You ask? CORNBREAD!
Max had his with onion rings and corn bread.
The corn bread was out of this world! It was really vanilla-ey. I’ve never had it taste that way before. We ate ours with lots and lots of honey.
I kept thinking about not eating it all but…
It was a clean plater for sure!
Then we hit the road for the last 30 minute drive to Max’s Cabin in Tahoma.
Once we got there Max and I decided to get some cookies made up to welcome everyone else. We ate a few of course.
3 ingredient {sinful} peanut butter cookies
ingredients
- 1 cup peanut butter
- 1 cup sugar
- 1 egg
Directions
Pre heat oven to 350 degrees. Whisk an egg in a small-medium bowl. Add in the sugar and whisk until combined. Add the peanut butter and stir with a spatula until completed incorporated with the sugary-egg mixture.
Add any toppings you’d like (chocolate chips!!!!!!)
Spoon onto a baking sheet and cook for 10-15 minutes. The will be mooshey. Let them sit on the pan for 5-10 minutes they’ll continue cooking and harden up a little.
