NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

When I woke up this morning I was surprised at how bright the room was... then I looked out the window to see the ground covered with snow! It reminded me how snow brightens our winter days... it's amazing how much light snow reflects! Unfortunately, it is no longer winter and I have been meeting with people getting their homes ready to sell, waiting for the green of spring before putting their homes on the market. We are supposed to get 6-10 inches by the time snow stops falling tomorrow night! I told buyers here from Los Angeles last week that it's unusual to have snow this late... but I guess I was wrong, found a photo I had taken of snow on April 11, 2011... I must have thought it was unusual then, too!
RECIPE OF THE WEEK
One of our grandsons loves fish... and dips everything in ranch dressing. So... I figured, why not combine the two. I slathered some cod (have also used walleye) with ranch dressing (thick style), topped with finely shredded cheese, and finished with buttered bread crumbs... simple and delicious.
BAKED FISH A LA RANCH

1 1/2 pounds fish... cod, walleye, etc - Cooking spray
- Hidden Valley ranch dressing
- Salt and pepper to taste
- Finely shredded co-jack cheese
- 1/2 cup fresh breadcrumbs
- 1-2 tablespoons melted butter
Preheat oven to 400 degrees. Season fish with salt and pepper, then thoroughly coat with ranch dressing and place in flat baking dish coated with cooking spray. Lightly sprinkle fish with grated cheese, then top with buttered bread crumbs. Bake at 400 degrees until it flakes easily with a fork, about 20-30 minutes depending on thickness of fish.
