NOTE: I spend my Wednesdays Unplugged from appointments. It's my day to stay home, enjoy cooking and welcome our kids and grandkids for dinner in the evening. We end our meal with quotes from the Norwegian 'Quote Cup' passed on to me from my grandmother. I share a quote and a recipe here each week, and sometimes some photos of family fun. I love trying new recipes...and love getting recipes you would like to share!

Last Sunday was the 3rd and 8th birthdays of our birthday-buddy grandchildren. Had a string of celebrations including a grandparent sleepover and 3D movie outing to see Ice Age Continental Drift. Our granddaughter's favorite part was The Simpsons new short before the movie! Our fairy princess had a special 'Hello Kitty' cake homemade by her aunt for her party, wore a dress made by her other grandma... and will spend many hours in the sparkly skirt made by her mom! Our grandson doesn't like cake so had a cookie cake... loves sports so had a fun flag football party in the park.

RECIPE OF THE WEEK

I made this guacamole a few weeks ago and it disappeared in a matter of minutes... I think I will at least double the recipe next time!  I used a food processor to blend everything but the tomatoes to make it super creamy, with the tomatoes the only chunks.

CREAMY GUACAMOLE

  • 3 ripe avocados, halved, seeded and peeled Guacamole
  • 1 lime, juiced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1 medium jalapeno pepper, seeded and chopped
  • 1/2 medium onion, chopped
  • 2 cloves garlic
  • 2 Roma tomatoes, seeded and diced

Toss everything except tomatoes into food processor and blend until smooth and creamy. Transfer to bowl and add chopped tomatoes. Let it sit for about an hour to let the flavors blend, then serve and watch it disappear!
