Inspired by this recipe, I decided to change it up a bit by adding dried cranberries and white chocolate. They certainly did not turn out looking symmetrical or like anything pinworthy, but they taste great :)
Ingredients:
125g butter, softened
1/3 cup brown sugar
1 egg
1 cup self-raising flour
1/2 cup dried cranberries
125g White Chocolate Baking Chips
2½-3 cups corn flakes
Method:
- Cream together butter and sugar until light and fluffy. Add the egg and beat well. Stir in flour and then the cranberries and chocolate.
- Drop tablespoonfuls of the mixture into the cornflakes and roll to coat. Place on a lined baking tray. Repeat with remaining mixture.
- Bake for 15-20 minutes on 180°C or until cooked. Cool on a wire rack. Store in an airtight container.
