Here is the banana bread recipe:
2 cups all purpose flour
1 tsp baking soda
1/2 cup butter (softened)
4-5 medium ripe bananas (mashed)
1/3 cup honey or maple syrup
1/3 cup milk (or dairy alternatives)
1 tsp. vanilla
2 tsp. ground cinnamon (more or less, depending on what you prefer)
1/2 cup chopped nuts (optional)
Directions:
1) Preheat oven to 350 degrees F. Lightly grease 9" X 5" loaf pan. I actually used a glass, circular pyrex pan for this and it worked out fine.
2) In a large bowl, combine flour and baking soda. In a separate bowl, combine butter, bananas, honey, milk, and vanilla. Note, don't add milk all at once (start with half). Add flour mixture, cinnamon and nuts. If you find that it is already a smooth consistency after adding the flour mixture, then don't add any more or else your bread will be too moist. The consistency you want to aim for is slightly sticky, not tough and not soupy.
3) Pour batter into prepared pan. You can sprinkle more cinnamon and nuts on the top of the bread before baking. Bake for 50-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean (check several spots of the loaf to make sure it is thoroughly baked). Let bread cool in pan for 10 minutes, then enjoy!
