ENG. This is a recipe I learned from my friend Em from college. She taught me how to do it when she came to visit me almost 6 years ago. Basically, it was a winter like this one, a very cold one and sad one because I couldn’t go back home for Christmas and yeah, I felt a bit like the Grinch who stole Christmas. In that time it was due to issues with my Italian visa, (not like now, where the issue is just that I work too much), but Em 6 years ago made it a very special one by coming and visiting me during that lonely Christmas time.
The original recipe is actually with pork, but you know Juana is a bit distracted and to make the story short, a year ago when she was doing her groceries she mistook pork for veal. She only realized it after cooking the whole recipe (of course!), but she decided to eat it anyways. The result: a delicious an even better recipe!!!! So here's my version of what I call Meat à la Em!
Ingredients for two people:
2 Veal culets
Olive Oil
¾ of a cup of Tomato sauce
¾ of a cup of Red Wine
¾ of a cup of Orange Juice
Rosemary
1 Chicken soup cube
Salt and Pepper
Fry the veal culets on a pan with olive oil for 3 minutes on each side.
Take out the veal and use the same pan where you were frying the veal to cook ¾ of tomato sauce. Add a little bit of salt, pepper and rosemary. Try it to make sure you like the taste.
To the same pan add ¾ of a cup of wine and stir.
Let it cook for a 1 minute and add ¾ of orange juice and stir. Afterwards let it cook for another 30 seconds.
Add a little bit of chicken cube and stir a bit, try the sauce to make sure you like it or to see if it needs more salt, pepper or rosemary.
Let it cook for 1 minute and afterwards add the veal, mix it with the sauce and let it cook for about 3 to 4 minutes more.
When it is done, eat with roasted potatoes or rice.
This is an easy but delicious recipe, perfect for busy people like me! Try it at home, I guarantee you are going to love it!
