Happy National Pumpkin Day! Today is all about the seasonal squash that you either love or love to hate.
For those of us who love all things pumpkin, it can be hard to understand why others may not share our affinity for this orange beauty. Yes, there are people who roll their eyes at pumpkin spice lattes and scoff at pumpkin, well everything.
If you’re one of them, I’m so sorry that the pumpkin has either lost or failed to earn your love and devotion. I’m guessing the early arrival of holiday decorations probably bums you out too, so this time of year is basically a living nightmare. Hang in there.
For the rest of us, let’s hear it for the pumpkin! More than a brightly colored squash, pumpkins have been transformed into hollowed-out, glowing works of art. They’ve been baked into pies. Heck, they’ve even passed as an emergency Uber in a pinch.
Basically, this magical spherical vegetable is the perfect squash for any occasion. Even if that occasion just happens to be a pumpkin spice pick-me-up latte. So, I guess there’s only one thing left to say. Thank you, pumpkins, for adding a little punch of color and a pinch of spice to our autumn…and sorry about the whole gutting and carving thing…
