This weekend at the wedding we attended, they had a delicious lightly marinated flat iron steak. Flat Iron is usually a little more affordable because it is considered a "marinating" steak at most groceries. So, if you are like me and wish you ate more steak but usually avoid that section because of the cost or because it's intimidating picking a good piece of meat, flat iron is a great option. It is lean and thin, so you can pan-sear it for a quick, easy meal with just a little bit of seasoning, like this recipe:
