All Things Kale…Day One

If you know me at all, and I hope by now you do, even a little bit…you will know that my newest food addiction is Kale.

Now, I know that right now some of you are going gah…yuck, why the hell can’t she post something delicious, like cake.

Well you will have to trust me here, kale is delicious, like cake, only good for you. Don’t make me do a post about using dandelions in your salad, because seriously I will…

So in my never-ending mission to try and get the world to grow and eat more kale I am going to post my top 7  favorite Kale recipes.

Some of them are mine, some of them are not, but they are all good for you and delicious. Really.

I will just say right now, that even though I have 6 different kinds of kale growing in my garden, my steadfast favorite kale is Lacinato or as it is also called, Dinosaur kale… it is juicy and tender and you won’t even know that you are eating kale, so if you have tried the kind that is tough and hard to swallow, there is hope for a more enjoyable kale experience, you might just have to shop around a bit.

Ok so let’s get you hooked on kale shall we?

First up. Salad.

Cabbage and Kale

I was turned onto this salad by my friend Wendy, who found a bagged version at Costco. It is delicious and I decided to make it myself, it is fabulous and super easy to make, it also will keep really well in the fridge for days, so it is a fast food that is great for you.

What you need:

  • 1 cup chopped Lacinato kale
  • 1 cup chopped purple cabbage
  • 1 cup baby spinach
  • 1 cup  chopped romaine lettuce
  • 6 raw Brussels sprouts sliced thinly (really they are so good, don’t leave them out!!!)
  • 1 cup sunflower sprouts or arugula sprouts for a nutty flavor
  • 1/2 cup spicy pumpkin seeds or your favorite roasted nuts (I don’t put these on until right before I eat the salad otherwise they go kind of soggy and I like them crispy, they don’t keep well in the fridge.)

What you do:

Mix it all together and serve with a creamy poppy-seed dressing. I love to add cheese as well, Feta is delicious and so is Parmesan ..or why not try Havarti!!

Store leftover in an airtight container in the fridge to enjoy anytime :)
