Melting Shortbread…

I make these every year for Christmas. Well except last year, because we were flying around in Helicopters and in the Hyperbaric Chamber and stuff. So I didn’t have time.

This year, I am making them. Today. Oh I also have a mini freezer now, which is awesome to get stuff stocked up. So here is my favorite and pretty much foolproof (nevermind) recipe for Shortbread cookies.

What you need:

  • 3 cups flour
  • 1/2 cup cornstarch
  • 1 cup icing sugar
  • 1 lb butter
  • 1/2 tsp almond or vanilla extract

What you do:

Melting Shortbread…

Cream butter adding sifted sugar gradually, work until creamy. Sift flour and cornstarch,  add to creamed butter and sugar mixture, whipping until fluffy.

Beat in flavoring.

May be dropped from a spoon or rolled. I like to roll mine and add decorations.

Bake at 325° until golden, about 10-15 mins, depending on your oven. These freeze really well :) I will probably have to make another batch before Christmas because everyone I will eat them, before we are anywhere near the holidays.
