I make these every year for Christmas. Well except last year, because we were flying around in Helicopters and in the Hyperbaric Chamber and stuff. So I didn’t have time.
This year, I am making them. Today. Oh I also have a mini freezer now, which is awesome to get stuff stocked up. So here is my favorite and pretty much foolproof (nevermind) recipe for Shortbread cookies.
What you need:
- 3 cups flour
- 1/2 cup cornstarch
- 1 cup icing sugar
- 1 lb butter
- 1/2 tsp almond or vanilla extract
What you do:
Cream butter adding sifted sugar gradually, work until creamy. Sift flour and cornstarch, add to creamed butter and sugar mixture, whipping until fluffy.
Beat in flavoring.
May be dropped from a spoon or rolled. I like to roll mine and add decorations.
Bake at 325° until golden, about 10-15 mins, depending on your oven. These freeze really well :) I will probably have to make another batch before Christmas because everyone
I will eat them, before we are anywhere near the holidays.
