Baking Upside Pineapple Cake in a Muffin Tin

I found this recipe on Pinterest, and having never made an Upside Down cake, I figured this would be an easy way to do it:

I really like making single serving stuff.  My husband and my daughter both have some issues with serving size.
One thing to note especially ... the recipe says to use canned pineapples; I opted for fresh (well, pre-cut, but fresh) pineapples.  When you buy them like that, they are cut pretty thick - which leaves little room in the muffin pan.  It may have been a little easier with the canned ones.

Also, if you aren't using a super-size muffin pan you will to put your pineapple in there in pieces.  I do have a large muffin pan (I would say about twice the size of cupcakes), but it still was not big enough.  Granted it could be because I used fresh pineapples instead of canned ... I still say it is worth it :-).

Is it just me, or does melting brown sugar in butter smell amazing?  If it wasn't for the texture - and the fact that I really should only have this mixture in small doses I would have been spooning it out to eat right away.  Alas, I put it in the muffin pan.  Yes, I said, "Have you seen the muffin pan?  The muffin pan? The muffin pan?  It's on Drury (<-- don't know if that is right, but it is my house dammit) Lane" several times.  I think my husband was about to beat me with the muffin pan.  the muffin pan ... the muffin pan.

Try not to get overzealous when pouring the cake mix into the pan ... like I always do.  Inevitably, I end up with a mini-muffin (or cupcake, what ever the case may be).  Why yes, that is a small pan from an easy bake oven in the background - teach 'em early, I say.  Of course she is now of age to start experimenting with the real oven (with supervision of course)

In the end it was totally worth it. Doesn't that look amazing?  It was - and the butter/brown sugar mixture made a nice crispy ring of bliss around the edge of the Pineapple Upside Down (Cup)Cake.  Here is the kicker, I am the only one in the house that really likes it.  At first I was disappointed I didn't hit a home run with everyone on this recipe - but then I realized, I could cook this and I would actually see more than one!
