Banana Protein Pancakes

Posted on the 18 February 2012 by Mattie @comfyconfident

I woke up this morning and went for a nice walk to Starbucks to get some coffee. It is exactly 15 minutes each way, the perfect distance for a morning ‘bootycall’ as the Tone It Up girls would say.

IMG_2307I read the newspaper while I enjoyed my morning cup of joe!  I love the new Blonde Roast Blend coffee. It is much milder than the other blends of Starbucks coffee. I find the regular Starbucks blends of coffee to be really bitter and almost sour.  As I sipped my coffee, I read the newspaper and caught up on everything going on around me.  I found out that Portsmouth Beer Week is coming up (Feb. 27 – March 5).  A whole week dedicated to beer, yes please!
The things you find out when you read the news! AMAZING :) A whole week dedicated to beer, yes please!

It was really relaxing to sit in a cafe and read the paper. The computer just isn’t the same as holding the actual paper in your hands. IMG_2310Once I got home, I made protein pancakes, which are so good and require very few ingredients.

Banana Protein Pancake
1 scoop vanilla protein powder
1/2 banana
1/4 cup liquid egg whites
add additional fruit or spices (per your discretion)

Mix all the ingredients together and make like you would regular ‘ole pancakes. I like putting Peanut Butter and Agave on top. The PB melts and gets all gooey and good. mmmmm

The mixture may be simple, but flipping the actual pancakes, not so much.

I have tried to make these pancakes several times and only once have they actually come out looking somewhat decent. They always taste great, but I seriously struggle with flipping them in the pan.

I tried greasing it up and putting it on really low heat – nothing worked. I think I may just need a better non-stick pan.

[uh oh]

These pancakes are the perfect comfort breakfast with no guilt!

Last night I caught up on some really good TV! Much needed R&R.

I am loving the new NBC show Smash. Katharine McPhee is so cute and likeable. They have only had 2 episodes and I have watched both. I highly recommend it if you are into Broadway/showbiz type stuff.

This season, I am a new Glee fanatic and it is such a guilty pleasure. This past Tuesday’s Valentine’s episode was so entertaining. It ranks high on my all time favorite Glee episode list.

And finally, I watched the New Girl. One word, HILARIOUS. I sit and giggle to myself. It is definitely a great show to watch when you just want to forget everything else and laugh. It’s right up there with Modern Family, in my opinion.
[Modern Family is better, duh.]

Now I am headed up to the mountain to ski. I wish there was some snow. Derp.

Have a great Saturday!

Question: What are your weekend plans?
