I successfully made it through my first day on a Vegan diet and it wasn’t that hard!
Here is what my eats looked like:
I ate a Peanut Butter Cookie Larabar for breakfast with a banana. This is my favorite flavor Larabar, I find the others to have a weird flavor and taste, but this one is sweet and satisfying. The ingredients consist of Dates, Peanuts and Sea Salt – that is it!
For lunch, I had a some “Cheesy” Chickpea Quinoa on a bed of spinach. I found the recipe over on Chelsey’s blog and made a huge batch the other night, so I could have it for a couple meals. I was my first time having nutritional yeast (that’s the ‘cheesy’ part of the recipe) and it was fabulous!
Vinnie and I went over to a friends house for dinner and enjoyed some great wine. I usually drink the cheapest wine I can find, but I got this Coastal Estates Cab Sav for my birthday and wanted to give it a try.
It gets two thumbs up! Dinner was pesto pasta and salad. Before going over for dinner, I had told my friend Katie I was eating Vegan, so she prepared the pasta and had chicken on the side for everyone else. It was very nice of her!! I put hummus on my salad as a dressing as the other dressings had milk products in them. It was a beautiful night. It finally snowed in NH!! Snow makes winter so much prettier. It was a good first day as a vegan!

So without further ado, here are my workweek workouts:
Monday: Back strength and 30 minutes at 6.8 for a total of 3.4 miles.
Tuesday: At home bodyweight leg workout
Wednesday:
Lots of yoga!! I practiced 2 hours of Vinyasa Yoga and 90 minutes of Bikram. It was awesome!
Thursday:
There was a snow storm so I couldn’t leave the house to get to the gym so instead I did a circuit workout in the living room.
Friday: Arms and Ab workout and 60 minutes on the elliptical while reading Fitness Magazine
This weekend Vinnie and I are heading back up to VT for some skiing and coaching. I am going to try to get a good hike in or maybe an OnDemand workout! We will see
