I’d say one of Joseph’s main food groups is granola. I typically buy the Kind’s brand gluten free granola in bulk from Amazon, but it’s expensive and I like to experiment… especially on my captive (not by choice) audience. So I looked up a recipe and went for it!!
Gluten free oats, sliced almonds, cashew pieces, flax seeds all tossed together with canola oil, maple syrup, agave, brown sugar and a pinch of salt and then spread on cookie sheets and baked in the oven for about an hour, stirring constantly.
Joe loves it! My only complaint is that the granola didn’t stick together in as big of chunks as I would like; I’ll work on making that happen next time. I think I just need to increase the stickiness factor? Suggestions?
