As I’m sure you’re well aware by now, I love my bean curd noodles. I first encountered them in Asia and fell in love instantly and have loved attempting to duplicate some of the fresh and spicy dishes I had when abroad. This dinner is a perfect and satisfying end to a day of restricting; it’s delicious but doesn’t send me into a tailspin with a high calorie content.
It’s also gluten free, vegetarian and paleo. Win!
