For my friends on Saturday night I made a delicious and fresh quinoa tabbouleh. I loosely followed this recipe, using quinoa in place of bulgur because quinoa is gluten free.
Fresh tomatoes, tons of parsley, tiny hints of mint, red onion, scallion, cucumber, fresh squeeze lemon juice, olive oil and salt and pepper round out the flavors of this dish for a satisfying, healthy, sustaining meal… and all for 150 calories per serving. Perfection.
