Happy Wednesday!
I am currently loving all the the hearty fall food options and really trying to take advantage of the cooler weather to make healthy comfort food. I roasted butternut squash and sweet potatoes with coconut oil a few days ago and used the leftovers in all sorts of different ways.
Yesterday eats started with an omelet full of veggies for breakfast. I combined one egg, egg whites, sauteed kale and the leftover roasted squash and sweet potato to make one killer omelet. The butternut squash was sweet, satisfying and surprising really good.
Once I got to work I made a cup multiple cups of coffee to keep me going. My morning snack was Chobani Yogurt with Steel Cut Oats. I was really intrigued by the new flavor and was pleasantly surprised. It was like pre-made overnight oats. Personally, I would of liked some more oats but you can always add those yourself. Otherwise I really liked it.
For lunch I had a salad with mixed organic greens, romaine lettuce, crumbled goat cheese, red peppers, beets, roasted butternut squash and an apple on the side. My afternoon snack is my go-to favorite, Dark Chocolate & Sea Salt Kind Bar. I eat them all the time!
I got home from work starving and starting snacking, by the handful, on tortilla chips. I knew I needed real food and I didn’t feel like cooking so I heated up some leftover Turkey Beer Chili. When I cook, I always try to make extra so I can use the leftover for quick and easy weekday meals since I never want to cook after work.
This is me after dinner; exhausted and full trying to find something good to watch on TV. While laying there I snacked on my new favorite mindless eating snack, Ginger Chunks. They are very flavorful, satisfy my sweet tooth and are good for digestion.
Later on in the night Vinnie wanted to “go for a walk” which is code for “get ice-cream” so we bundled up, braved the cold and walked to Whole Foods to grab some Cookies ‘N Cream ice cream. I only had a few bites because my stomach was bothering me but it was nice to get outside and enjoy some fresh air since I am cooped up inside most of the day.
I am going to try to get outside to run this week but it is supposed to get super cold and I am not sure I can handle it! Brrrr…
