Chocolate Chip Cookie Recipe from Kelsey's Apple A Day

Hello everyone! Yesterday was pretty much a wreck. I was a wreck. One of the ways to calm down for me is to bake or clean. I chose to bake because I was going swimming with my cousins later, at 1:30 yesterday and I wanted to make a treat for them to take with us swimming. I thought cookies would be the easiest, so I decided to try a new chocolate chip cookie recipe and kind of scoot away from the recipe that I normally make. My family's secret chocolate chip cookie recipe. I will eventually post it on here, but for now, I have a recipe from Apple A Day with her adapted chocolate chip cookie recipe from Food Network Canada. This recipe is super easy and turned out super yummy, but just a little flat. Which is fine.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
What you will need for this recipe is:
~3/4 cup of butter
~3/4 cup brown sugar
~1/4 cup granulated sugar
~1 egg
~2 tsp. vanilla extract
~2 cups all purpose flour
~2 tsp. corn starch
~1 tsp. baking soda
~1/2 tsp. salt
~1 cup (or more) of semi-sweet chocolate chips.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~First, you preheat the oven to 350 degrees. Next, you get out a mixing bowl, like a medium sized mixing bowl and you cream together the butter and the sugars with an electric hand mixer or a stand up mixer with a mixing paddle. I used the electric hand mixer.Chocolate Chip Cookie Recipe from Kelsey's Apple A DayYou will need to keep with it. At first, it might not look like it is doing anything, and I got scared that I was doing something wrong, but all I had to do was keep with it and keep mixing. It will then cream together and it will turn out how it is supposed to be. You will know when it happens.Once the butter and the sugars are creamed, add the egg and the vanilla and blend in.Chocolate Chip Cookie Recipe from Kelsey's Apple A DayChocolate Chip Cookie Recipe from Kelsey's Apple A DaySo, mix that together. It turn kind of liquidy after the egg and vanilla...Chocolate Chip Cookie Recipe from Kelsey's Apple A DayNow... you can use a fork or keep using the hand mixer. I am not sure what made the cookies flat, the fact that maybe I over stirred them with the hand mixer, or the fact that there was corn starch in the dough/batter for the cookies. I haven't quite figured that out yet. So, you can keep out the corn starch, or add it in. You can keep using the electric hand mixer or go to using a fork. Either doesn't matter, but it is an experiment for me, so if you make these and do it differently with the substitutions that I suggested, can you comment on this post and tell how your cookies turned out? I want to know what I did wrong.Now is the time to add in the flour and such. Add in the flour, baking soda, salt and corn starch. (If you are doing it the other way around, add in the flour, baking soda and salt and stir with the fork.)Chocolate Chip Cookie Recipe from Kelsey's Apple A DayChocolate Chip Cookie Recipe from Kelsey's Apple A DayNow, mix in with either the hand mixer or the fork.Chocolate Chip Cookie Recipe from Kelsey's Apple A DayThen add in the chocolate chips, and DON'T use a hand mixer with those. Just stir those in with the fork or a spatula. I stirred my chocolate chips in with a spatula.Chocolate Chip Cookie Recipe from Kelsey's Apple A DayNow, the recipe doesn't say to grease a cookie sheet, but I did and I am glad I did. So, grease a cookie baking sheet and start plopping the dough on the sheet. Make sure to space them out a great deal. They will spread out, and they will stick together. I had that happen.... I also made them kind of big... I was in a hurry.Chocolate Chip Cookie Recipe from Kelsey's Apple A DayChocolate Chip Cookie Recipe from Kelsey's Apple A DayThen, once they come out of the oven, put them on a wired cooling rack, or paper lunch sacks. I don't have a wire cooling rack, I really need one, but I just made a little substitute rack thing out of paper lunch sacks. It seemed to work. It did work!Chocolate Chip Cookie Recipe from Kelsey's Apple A DayChocolate Chip Cookie Recipe from Kelsey's Apple A DayThey turned out just a little flatter than my cookies normally turn out, but that's ok. I took them swimming and my cousins loved them! My cousin Abbie ate like four without even realizing it. They were pretty good. I forgot to take result pictures right after they were baked, so I took result pictures after I got home from swimming with the plate I took home with me. I left a plate of cookies with my cousins for them to take home and enjoy.Chocolate Chip Cookie Recipe from Kelsey's Apple A DayChocolate Chip Cookie Recipe from Kelsey's Apple A DayChocolate Chip Cookie Recipe from Kelsey's Apple A DayChocolate Chip Cookie Recipe from Kelsey's Apple A DayIt looks more like a cookie mound than individual cookies. Oh well, they tasted amazing none the less.I am going to definitely perfect this recipe next time I make them and I will blog about it letting you all know how it turns out. But, if you do make these cookies, please comment below and tell me how yours turned out and what you did. That would be wonderful!Thank you for reading and hopefully you enjoyed :PAnd thank you Kelsey from Apple A Day for providing me with a great, easy cookie recipe! Thank you all my lovely readers!

I'm so glad you liked the cookies. I'm not sure why they flattened out--mine usually stay super puffy. My first thought is to no soften the butter quite as much. Thank you for trusting my blog!
