

Ingredients1 ripe banana (mashed)1 ¼ cup all purpose flour (maida)2 tsps all purpose flour for dusting the baking dish and dry fruits.5 heaped spoons of sugar 1 ½ tbsp Sunflower oil/unsalted butter ½ cup luke warm milk½ tsp cinnamon powder½ tsp baking soda1 tsp baking powderChopped dry fruits (walnuts, almonds and dates) ½ cup
Method1. Preheat oven at 200 C and in the meanwhile sieve all purpose flour, baking powder, baking soda and cinnamon powder in a mixing bowl and keep it aside.2. Now in a different bowl add the mashed banana, 1 ½ tbsp oil/butter, sugar and mix well till the sugar dissolves. Use a hand blender if you want.3. Now add the flour mix (from step 1) into the banana mix (from step 2) gently and keep adding luke warm milk to make a lump free batter.4. Roughly chop the walnuts, almonds and dates. Add 1 tsp of flour and mix well with the dry fruits (mixing flour with the dry fruits prevents the dry fruits from settling at the bottom of the batter while baking) 5. Now add the dry fruits to the cake batter and lightly mix again.6. Grease a small baking dish (I used a 7X5 inch dish) with oil and dust it with flour generously. 7. Add the cake mixture to the baking dish and tap the dish on the shelf for any air bubbles before putting in the oven.8. Bake for 35-40 mins at 180C and do a toothpick test after 30 minutes and adjust the time if the cake is still raw from inside.9. Let it rest and cool down at room temp. Un-mould and Enjoy the Cake :))10. You can store it for upto 3 days in the fridge in an airtight container.

It’s a super quick recipe which doesn’t take much time and effort and the best part is that its eggless and doesn’t contain a lot of sugar :) I personally love it and it tastes even better a day after!!So I hope you all enjoyed the recipe and ya...dont forget to share your lovely comments..oh btw did I mention that the kitchen smells divine when you bake this :P
