Why do people like Wine so much? I asked myself every time I saw people ordering it at fancy restaurants. I have a few friends who just stick with a certain type of Wine who don’t touch anything else…Over the years my curiosity has only increased but then I think like I only stick to Baileys and Mojito’s so the case must be the same. But little did I know until I started reading about Wines and their types and how they increase the taste of dishes they are accompanied with…My Wine journey has just started and I already love how a simple Wine can stimulate the senses in terms of taste, smell and even sight!!

I was recently asked if I would be interested in reviewing a Wine from Four Seasons and I lovingly accepted their offer. The reason was simple I wanted to see how Indian Wines were different  or were they on the same level like the various International brands of Wines available in the market. Four Seasons Wine ~ A wine for all seasonsI received a beautiful bottle of Four Seasons Classics Merlot Wine the following week.My thoughts on the wine:Merlot Wines are regarded Easy to Drink and its popularity lies in the fact that it is Softer and fruitier in terms of taste and is often made as an introductory wine for the first time Red wine Drinkers. Merlot wine matches with a wide variety of foods because of its position in the middle of the red wine spectrum. Four Seasons Merlot The breathtaking landscape of the Western Ghats is endowed with perfect natural conditions to nurture the fine French varieties of wine grapes. With gravely soils that are rich in iron with good drainage and mild weather throughout the year, the Sahyadri valley forms an ideal terroir for grape growing. The controlled yield of grapes ensures good concentration of aromas and a well-rounded structure on the palate, giving each wine a special identity.Type: Still Red WineGrapes: MerlotOrigin: Baramati, Maharashtra, India Style: DryTasting notes:Color: Ruby red in color with a hint of garnet Aroma: Delicious aromas of ripe black fruits, especially plums. (In Delhi)Four Seasons has a wide variety of wines to choose from:Four Seasons Cabernet Sauvignon Four Seasons Shiraz FourSeasons Chenin Blanc FourSeasons Sauvignon Blanc FourSeasons Blush Wine FourSeasons Merlot FourSeasons Viognier FourSeasons Barrique Reserve Cabernet Sauvignon FourSeasons Barrique Reserve Shiraz I initially wanted to make a slow roast lamb in red wine reduction but then considering the killing hot weather I decided to make something cooling with it, I had 2 options in mind Poached pears in red wine or Pears and red wine sorbet and I zeroed it down to the later one to beat the heat.Four Seasons Wine ~ A wine for all seasonsHere is a quick recipe!!Things you will need:1 cup (dry) red wine.6 to 7 tsps of white sugar.1 cup of pears (cubed)Juice of one lemonPinch of rock salt.waterMethod:1. In a small saucepan, bring wine, 1 1/4 cups water, and sugar to a boil over medium heat, stirring often, until sugar dissolves. Add pears; reduce heat, and simmer until tender, 5 to 10 minutes.2. Stir in lemon juice and a pinch of salt; cool completely. Transfer to a shallow baking dish. Freeze until solid, about 6 hours (or overnight).3. With a fork, break frozen mixture into large pieces. In two batches, puree in a food processor until completely smooth, 2 to 3 minutes per batch. Transfer to an airtight container; freeze until ready to serve (sorbet will be soft). 4. Serve Chilled!!
