The brand new Minions movie hits cinemas on June 26th and to celebrate, Green Giant challenged some of us bloggers to create the ultimate Minion-inspired summer snack using their much loved Green Giant Sweetcornwhich is a perfect ingredient for family mealtimes: kids love the delicious, naturally sweet flavour, and it’s great to know you’re giving them something healthy and nutritious.

The Minions movie shares the adventures of Stuart, Bob and Kevin as they search for a new evil master to serve. It’s an epic journey – and we all know you can’t undertake an epic journey without enjoying some delicious, healthy food before you go.

The Challenge

The challenge was to show how we could bring some Minion fun to mealtimes by incorporating Green Giant Sweetcorn. We were sent two 4 packs of Green Giant Sweetcorn to use in the challenge. My first thought was to use it on a pizza but then I wondered if there was any way I could make something sweet rather than savoury. I came across various recipes using coconut and sweetcorn so thought why not try a Minion cake so here it is - my Coconutty Corn Minion cake decorated by me and my little sidekick Zachary. 

Here's the recipe for my Coconutty Corn Minion Cake: Ingredients 
Cake: 2 tins (approx 400g) of Green Giant Sweetcorn - I used the Salt free ones 200ml coconut milk 3 eggs 225g caster sugar 3 tbsp plain flour 1/2 tsp baking powder To Decorate: Icing sugar Icing pens

Ready made tube of blue icing or blue food color and icing sugar 2 Chocolate buttons Paper to draw out a Minion shaped template 
2 year old helper/supervisor/taste tester optional Method 1. Preheat the oven 160 fan / 180 normal oven.  2. Grease and flour a baking tin 3. Put all the ingredients in a food processor in the order listed in the ingredients and whizz up until blended.

4. Pour the mixture into the baking tin and place in the middle of the oven.  5. Bake for 35 minutes.  6. Leave to cool and decorate.

To Decorate To "minion-ize" the cake I drew out a minion shape and then cut around it with a sharp knife to get a general minion shape. (I will scan in the template shortly)

I made up some white icing using icing sugar and used a squeezy tube of ready made blue icing for the minions clothes. With icing pens I drew in the details and used two chocolate buttons for the eyes.

Zachary, my two year old helper was responsible for the taste test of the off cuts while I did and he confirmed it was "yummy" so I definitely got the thumbs up from him.  Here's the finished Coconutty Corn Minion Cake.
