Household budgets are tight for many parents – and that means cutting down on expensive food. Jacket spuds
Never underestimate how far the humble spud can stretch if you’re dinning on a budget. Jacket spuds often get a bad rep for being dull and uninspiring, but being creative is not difficult. Try hollowing out a spud, mixing grated cheese and diced chilli together with the potato, refilling the shell and returning to the oven for a couple of minutes. Beautiful!
Soup
Soup is so versatile that you can pretty much make one out of whatever random ingredients you have in the fridge or cupboard. If you’ve got a leek, a handful of potatoes, for example, then dice them up, cook them slowly in a knob of butter, add some stock (chicken or vegetable will do) and blend when done. Easy.
Curry
There are usually great deals to be had on fruit and vegetables, which makes cooking up a curry on a budget simple. Chick pea curry is cheap and easy to make – and tastes delicious. All you need is an onion, garlic, spices like cumin and coriander, tomatoes, a can of chickpeas, some ginger and some rice. Cook up the vegetables, add the chickpeas and water – and hey presto, curry in a hurry!
