Lemon Butter and Basil Quinoa Chicken

I received a packet of quinoa in the January Eco Emi box. I haven't gotten around to making the quinoa till today. At first, I was a little nervous about how it would turn out. I had never had quinoa before. I got it out and read how to make it, and it seemed simple enough. I wanted to add something to it. I had planned, for the past 3 weeks, to make chicken with quinoa, but I could never find an easy recipe and all the recipes had extravagant items in the ingredients list. I didn't want to go out and buy those items today, so I just made up my own recipe.

It's a little like rice, but it's got little white germs sticking out. (Germs, it's what the sprout is called)Lemon Butter and Basil Quinoa ChickenLemon Butter and Basil Quinoa ChickenLemon Butter and Basil Quinoa ChickenQuinoa after it's done cooking.Lemon Butter and Basil Quinoa ChickenHere is the recipe for Lemon Butter and Basil Quinoa Chicken:Lemon Butter and Basil Quinoa ChickenLemon Butter and Basil Quinoa ChickenLemon Butter and Basil Quinoa Chicken            INGREDIENTS:        ~1/2 cup Organic Sprouted Quinoa (1/2 cup serves two people, or two servings)        ~Chicken (frozen or from the meat counter at the grocery store)        ~1/4  lemon (cut the part in half)        ~About 2 Tablespoons of butter        ~Herbs and spices to taste (I chose Thyme, basil, rosemary and garlic powder)        Directions:        1.) Preheat the oven to 450 degrees.        2.) Above, the directions are on the quinoa picture for cooking the quinoa. And also, when you                purchase quinoa, it will have the directions on there as well.        3.) Next, take the chicken (defrosted if it's frozen) and put it on a cookie sheet or broiler with a sheet                of tin foil covering the pan. Set the chicken on the foil covered pan.        4.) Melt 1 tablespoon of butter with about 1 table spoon of freshly squeezed lemon juice in the                microwave for 15 seconds. If the butter isn't all the way melted after 15 seconds, you can use a                fork to whisk it into the melted butter and lemon juice.        5.) Pour the melted butter and lemon juice mixture over the chicken, make sure most of it gets on the                chicken. It will spill over into the foil covered pan, but that's okay because it will create a nice soak                 for the chicken to bake in.        6.) Next, sprinkle some of your chosen herbs and spices onto the chicken. The butter mixture will help                keep the spices and herbs on the chicken.         7.) Put it in the oven, and bake for 10 minutes.         8.) After the first 10 minutes, take the chicken out and flip it over on the other side. Repeat steps #4                #5 covering the chicken on the side that is now flipped over and hasn't been covered yet. Bake for                an additional 10 minutes.         9.) After it's done baking, let it cool. While the chicken was baking, the quinoa should have finished               cooking and cooled, put the quinoa in a bowl, and after the chicken cools, cut it up into pieces and                place over the quinoa, Bon Appetit! Lemon Butter and Basil Quinoa ChickenHere is the TruRoots website: http://truroots.com/   Enjoy!Yum!
