Potato Leek Soup

Several weeks ago we got leeks in our Bountiful Basket. I had never cooked with leeks before so I was excited to try it. You'll find that leeks are grown in sand and can be very dirty when you buy them. They need to be completely cleaned and it took me awhile to get ours clean. Here's a great video on how to clean and prepare your leeks.
It was still snowy weather at the time, so I decided to try some potato leek soup. I followed this recipe from Simply Recipes. I changed it just a bit for us though.
Ingredients:
3 Leeks (clean, slice lengthwise, and then chop- use only the white and pale green parts)
2 Tbs butter
2 cups water
2 cups vegetable broth
2 lbs potatoes, peeled and chopped
1/4 cup parsley
1 minced clove garlic
1/4 tsp marjoram (original recipe also calls for thyme but I omitted it because I don't like it)
splash of hot sauce
salt and pepper to taste
Sautee your leeks in the butter until translucent- about 10 min. Cook water, broth, and potatoes in a sauce pan until potatoes are tender. Add your leeks. At this point you can puree your soup in a blend if you like. I chose not to. Add the rest of your seasonings and hot sauce and serve.
So easy and perfect for a cold night. I was a little worried that it wouldn't have much flavor but this soup has a really subtle and comforting taste to it. We will for sure, be making it again. Enjoy!
