One. Breakfast.
Two. Lunch.
Three. Dinner.
Three meals a day is supposed to keep me out of the doctors office for two more months...at least that's what the nurse told me after she sucked a liter of blood out of my arm!
So, today started a bit "meh." Most mornings usually do because I stick to a boring breakfast during the week: Iced coffee, breakfast meat, one egg, and one slice of toast.
"Meh"
But for lunch, let me tell you - I turned it UP! I made a simple baby spinach salad with the most amazing tuna - EVER.

Organic baby spinach, sliced white onion and 1/4 cucumber, a couple of croutons and I
used 1/3 of the Tonnino tuna filets. For dressing, I used a light Caesar.
Dinner, as it's customary every Thursday, is sushi night. So we went to our favorite spot, and kept it simple to make room for dessert.
The Room Sushi makes the best fruit-infused iced tea. My favorite is the mango.
I'm also addicted to their spicy tuna on crispy rice appetizer!
For dessert we walked next door (literally) to Starbucks and had a "tall" (small) coffee and a pastry. I opted for the La Boulange croissant, while my hubby had two chocolate chip cookies.
Sure, it was good - but honestly, it was only slightly "close enough" to the flavor and flakiness the original bites of heaven have in San Francisco.

It's days like this that make me realize how doing three things - right - can put a bounce to your step and keep you smiling well into a long work night ahead.
