A day off work for me today and trip to Reading with my mother in law and nan in law for a spot of shopping. We decided to go to Pizza Express in the Oracle and I wanted to go for something healthy so I was pleased to see a new salad on the menu in the form of this Leggera Superfood Salad.
The salad is made from baby spinach, mixed leaves, roasted butternut squash, beetroot, light baby mozzarella, avocado, pine kernels, cucumber, lentils and fresh basil. It also has a balsamic syrup dressing. Reading that back, I have just realised that the avocado and mozzarella was left off mine! I didn't actually notice at the time because I was more excited about the butternut squash when I read the ingredients. The salad is priced at £9.95 and I added chicken for an extra £1.
The idea of this salad is that it is under 300 calories, but I guess without the avocado and mozzarella mine was even less calories. No wonder I was starving half an hour later! To be fair I did enjoy the taste of it. The butternut squash was very nice and cooked just right so that it was nice and soft and the beetroot was lovely and sweet. The chicken was very tender and the pine kernals and balsamic syrup added a nice flavours.
Verdict Whilst I enjoyed the taste of the salad I do think that £10.95 is expensive for what you get and I feel even more short changed now I have realised that 2 things were missing from it. I like that Pizza Express are offering lower calorie options but this was just not enough to keep me full! REVIEW! Pizza Express Leggera Superfood SaladREVIEW!
